I have had a look at your trial version and am impressed by what I see. I can see how joomlalms can run courses for batches of students with an online moderator but my business model requires individuals to work through online courses independently with limited teacher involvement. ie I will have many instances of the same course running with only one student in each course.
Can joomlalms accommodate this and if so how?

What is the reason for this separation of students?
So you can create course, disable self-enrollment for it, copy it (export/import) into several courses. Then manually add students into the courses.

I am not a school or training business or a business wanting to train many staff. I just want to offer courses online for whoever is interested in learning about the subject. I anticipate that people would want to do a course whenever they want rather than waiting for a class to fill. Obviously, under this model ,it would be very hard for a teacher to keep track of 100's of students at different stages of the course so I want to minimize teacher involvement and just want a test at the end of the course and no assignements of much interaction.

IMHO managing of ~100 courses much harder for teacher then managing of 1 course with 100 students.

I am not sure, where the problem is.... Of course it is possible to have a complete course "fully automated" for individual students (you will find the individuals under userr -> users without group, so there is no need for student "batches" whatsoever).
To fully automate courses you use quizzes for testing and offer a certificate at the end of the course or at the end of a "final-exam" quiz.
A little hint... Turn off the attendance and drop box options when setting up a course, as they will not be need in a fully automated course without "class times" ;-)
Well, maybe I didn't quite understand your concern, but for us it works well. If it doesn't for you, please specify further what you are looking for.
