I was curious. Can we buy Joomla LMS and host it ourselves? Or is the only option to have it hosted? We would pay the fee's of course, but we are looking for something that we can host.

Of course.
At the 'try&buy' section you can select only 'yearly license' option and leave all other options (like paid hosting, support) blank.

Actually you CAN get a full hosting service from Elearningforce (or some of their partners) from what I understand.
However - installing and running joomlalms on your own system is the general idea. It's simple and straight forward, if you have at least a little experience with the Joomla backend. If you run into problems, ask DEN.... :-) He is wonderful! Ideally you would use a dedicated server (but don't have to). Videoconferencing is usually outsourced (either to elearningforce or another company offering the Flash Communication Server). To do this part yourself would be quite expensive - but is possible.
What may be confusing is: you can only get a one year license for the product (even if you host it yourself). However, in my view the yearly fee is well worth it, as the product is constantly updated and developped further. (And NO, I am not a professional partner of Elearningforce, just a tester and user).
