I am constructing a quiz all looks great in firefox but when i view the quiz in ie i get a box instead od dashes and commas, please see file attached.

How do I fix this

Try to use ‐ and &quote; entities instead of symbols

Also check the encoding codepage in your browser.
For me dashes in the quiz name are showed correctly.

OK i have tested and this only applies when a quiz is applied to a learning path folder, if i take the quiz by just clicking on the quiz icon it seems to work fine!

I have many quizes thoughout my courses so i need to have the facility to include a quiz in the learning path folders.

So, then quiz is added to the learning path it's name is copied to the learning path step name. During playing the learning path the step name is sowed instead of quiz name. Try to rename each learning path step (just replace the dash character in the name to the same typed on the keyboard). I can't understand what is cause the problem, but this solution will solve it.
Also replace quote in the question feedback to the quote typed from the keyboard.

as you can see from the picture above it's not just the titles of the quizzes its throughout the whole quiz in the titles, questions and the question feedback.

Yes, the symbol in the phrase "..It's the resposibility..." is not a single quote, it is a special symbol, which was copied from the Word, or other text processing editor. Seems that it can't recognize in all browsers. So try to replace it to the single quote typed from the keyboard. I've tested that solution and it's work.
